Cheesecake Filled Strawberry Dessert

Dan recently had a luncheon at work and yours truly was designated to bring dessert. So this recipe is made for a LOT of people! But you don't have to bake anything so changing the proportions should be fine :)

Ingridients:

  • 3 packages of strawberries, washed and ready to go
  • 2 8oz. packages of softened PHILADELPHIA cream cheese (I love me some off-brand ladies, but on cream cheese, you gotta splurge a little)
  • 2 cups powdered sugar
  • 3 tsp. vanilla extract
  • Graham cracker crumbs (optional)

First, mix together cream cheese, sugar, and vanilla. Pour into your choice of icing bag and set aside. Next comes the fun part (besides eating). Cut a small triangle out of your strawberries. Some versions of this recipe I've seen have you scoop out the berry guts or cut the berry into an x and blah blah blah. Girl, please. I'm so lazy I don't even wanna write about all that. Triangle = easy = me likey. Plus, if the strawberry has a bad part, just cut it out.

Next, you'll want to take a slice out of the back of your strawberries so they will lay flat on a plate or platter. Plus, I think it gives the perfect ratio of strawberries vs. cream (but I like things riiiiich!). I started taking the slice because I had problems with the cream sliding off the berry in my un-airconditioned, hot kitchen. And now I have little strawberry boats!

Next, just take your icing bag and fill them up! If you don't have a bag, you could always cut the corner off a plastic baggie and use that. You just might not get the fancy designs. Feel free to sprinkle graham cracker crumbs on top of them for an extra sugar rush.

Make sure you keep these guys refrigerated until you serve them. And I would be careful about the kind of lid you put on your container so you don't mess up your super pretty icing. And Viola! Cheesecake filled strawberries!!... Quick, hide them from your husband and call the girls over! :P
